So what made you decide to open your raw food restaurant? Ah, Pure Food and Wine?

When I first learned about raw food it was pretty clear to me that there wasnrsquo;t a lot of options out there for restaurants and the ones that were around were more cafes that seems to carter more specifically the raw food crowd.nbsp; And the first time I heard about it was actually in one of these places.nbsp; The food was really good but I felt like it could be done a bit better and it was just the kind of place where, it was a tiny little place and there was a girl there who was at the next table eating alone.nbsp; Who was started to talk to and she talked about how raw food changed her life, and she felt like a new person, and she felt great, and she said and then at one point she said that she was there alone because her she said her friends would never come to a place like that and she said I wish someone would open a cool raw food restaurant and that was like one of the light bulb moments

Where I just knew something was significant when she said that it was sort of like oh and this was just the first time I've ever even heard about raw food a friend brought us to this little cafeacute; and so I got intrigued by it pretty quicklynbsp; and then a year later comes the restaurant open

So what sets your apartment ah restaurant apart from other raw food restaurants?

S
Well we have a big wine list and make really good sake cocktails so that is something sort of unusual in the world of raw restaurants and I think environment wise it doesnrsquo;t when you walk in it looks like kind of like lots of linen and fabric low lights and candles its kind of a sexy atmosphere and you walk in you wouldnrsquo;t know it was nothing but another restaurant there is nothing strange and also most of the people that work at the restaurant arenrsquo;t raw even vegan there are quite a few vegans but I think that this creates a vibe that is very welcoming to the sort of main stream

Because the restaurant was really created not specifically for a raw food crowd though it makes me so happy there are people who can eat only raw or people who are vegan or people who even people that are lactose or glutennbsp; intolerant can come to a nice restaurant and order whatever they want off the menu and have a place where they can their family or friends that you know they wont be put off by and I really always want it to go for the welcome and comfortable as possible and you know I think that works most of the guest at the restaurant at any given time are either raw or vegan and most of our regulars thatrsquo;s the same with most of our regulars at the restaurant you know I sort of like that I like you know easing this kind of food as a style of convenience to the main stream and you know also for me it feels to me to have the most significant impact and a change and helping to push along this ship as appealing to possible all the people out there who are the ones who you know might need to make a change the most or would be helped by you know making a change in their diet or their lifestyles the most and so hopefully this place can open more and more minds

After learning about raw foods did you mostly transition to a raw food diet very quickly?

SO WHAT INSPIRED YOU TO WRITE THE BOOK ENTERTAINING IN THE RAW?

M
That was the 3rd raw food book and it really came about by taking a really deep look at what my influences were in preparing raw food.nbsp; I was struggling the first few years to really define the inspiration for raw food because I was a classically trained chef so we were trained in stocks using animal products and so forth and it didnrsquo;t feel completely natural developing raw food that was derivited form that kind of cuisine.nbsp; This type of raw cuisine is very new so really just started giving it a lot more thought and a lot more research and I found that my inspiration was coming from art and music and all the things that I really like in the non food world. So the book was an expression of that.

DO YOU THINK THAT PREPARING RAW FOOD FOR A CROWD TAKES LONGER THAN PREPARING COOKED FOOD FOR A CROWD?

M
It defiantly can, it depends on the person whorsquo;s doing the cooking and what sort of staples they have in their pantry if its someone who has a lot of sprouted nuts and greens and so forth like that already and certain basis in their home and all the ingredients then it can be relatively easy and in many ways its more practical because of the lack of requirements of heating and keeping things hot and so forth.nbsp; The food in entertaining in the raw much of it is very complex intentionally because I felt Irsquo;ve done a couple simpler books and im writing a simpler book right now but I felt like its also important to realized what the potential is with this style of cuisine to just like in ordinary cook books there is this everyday food that Rachel ray prepares but there is also the much more complex foods for example Thomas Keller prepares.

WHAT KIND OF TIPS CAN YOU OFFER FOR PEOPLE WHO INTERESTED IN ENTERTAINING IN THEIR HOME USING RAW CUISINE?

I think that everybodyrsquo;s at a different level so its really about understanding your comfort level I think that the good news is there are always dishes with raw food that almost everybody would like for example raw lasagna thatrsquo;s a recipe that I did in my first raw food book but entertaining in the raw therersquo;s a catalone which is really beautiful and full of flavors that people would recognize like tomato and pesto and so forth but therersquo;s no dehydrating involved so the first time I would suggest something like that because everyone would be familiar with, its very attractive and doesnrsquo;t require some of the complicated steps but as time goes no I recommend trying really creative stuff.

IN ENTERTAINING IN THE RAW YOU TALK ABOUT USING SEASONAL FOODS SO WHY IS SESONALITY SO IMPORTANT IN RAW CUISINE?

I think itrsquo;s the essence of raw food and im not talking about the most complicated recipes but the essence of raw food is really based on the food itself like the quality of the ingredients.nbsp; Im a chef making creative food but I just had a mango for breakfast so it just happened to be ripe and sweet and seasonality is just the best products, when theyrsquo;re in season they have their full flavor, they have more nutrients, theyrsquo;re full of water they have natural sugars, theyrsquo;re just better and they require less work and theyrsquo;re more attractive and just better for you so its just really important to follow the seasons and our bodies follow the seasons. In the winter our bodies crave thing that are rooted in the winter there are a number of reasons but itrsquo;s become the number # guiding light for this kind of cuisin...</itunes:summary>

Rick : Hi David, this is Rick Cabados, founder of RawPeople. Irsquo;m very delighted to be here today with you on this radio interview Irsquo;m so glad that yoursquo;ve been gracious to share your thoughts and feelings with us Irsquo;m very impressed by your world view of life and your understanding of the interconnectedness of all that is Irsquo;m going to start out with a question about Rudolph Steiner and I understand that you have studied Rudolph Steiner, Steiner for those of you who are not aware of him was Germanyrsquo;s equivalent to Leonardo DaVinci and Steiner indicated that he perceived that lack of practical ingenuity skills in children, [...] back in the early 20rsquo;s.

The general teaching and educational practice of the day, he maintained, reflected the general state of consciousness.nbsp; This is a quote from Steiner: "living in the time of the flowering intellectualism, the soul or spirit, or the astral ego organization of the children, cannot penetrate the muscle system. It only connects to the bones. The result of this, later in life, is even more dry intellectual dead thinking in the general lifestyle of materialism.rdquo; Whatrsquo;s hersquo;s talking about there is children [are] not learning basic things and practices and skills early in life so my question to you is:

Could this lack of children learning these practical skills have lead to this advent of "I-want-it-now" materialistic mentality that is affecting our society now?

David: The answer is yes. First of all, Irsquo;m so appreciative [that you asked] me about Rudolph Steiner because Rudolph Steiner was a titanic force of information in the earlier part of the 20th century and before that. The body of literature that he left behind is so incredible. I was just in new York at the Rudolph Steiner book store going through volume, after volume, after volume of material; and when I see that material, I am immediately inspired at the level of ingenuity and the power of one human being.

When you bring it back to whatrsquo;s going on with our children today: what definitely could be going on is an inspiration for children to bring them to the level of Steiner, to bring them to the level of Da Vinci, and Michaelangelomdash;the great minds and consciousnesses of our timemdash;and yes: therersquo;s no question that there is this dry, intellectual, dead-thinking thatrsquo;s lead to a lifestyle of materialism (that has nothing to do with ournbsp; soul fully coming alive in our body).

More specifically, when Steiner talks about bones, hersquo;s talking [about] when a snail secretes his shell, the shell is then left behind as detritus on this earth. Over thenbsp; millions of years, the left over materialnbsp; is the calcium thatrsquo;s in the earth.nbsp; That material is like dead material that is left over, and thatrsquo;s like our bones.

So, when he is talking about bones, he is talking about material that our bodies secretesmdash;its kinda like a dead material that is like a shell. When he is talking about our muscles, he is talking about coming fully alive into our body, and actually feeling the world and all aspects of the world as the world can be perceived.

We donrsquo;t really know what the world is; we just know what our perceptions are. And if we come fully alive into our bodies, our muscular systemmdash;then we actually begin to sense the world as different. Last year Shannon began regularly contributing to the rawmom blog, helping it grow to 10,000 readers in one year and was asked to become their Director.

Shannon has two books coming out this Spring, one with Angela Elliot on BEAUTY, called GET NAKED and WEAR YOUR FOOD, and another called RAW MOM, COOKED DAD.

Shannon has been doing radio, TV and print interviews which you can google, and has posted over a dozen videos of her raw family life on YOU TUBE.
