Holiday Cheese Ball

Holiday Cheese BallHoliday Cheese Ball

This is a great appetizer for parties.  It’s a wonderful alternative for the traditional cheese balls you may have had in the past.

Serves 6-12 people

  • 1 cup raw cashews
  • 2 Tablespoons olive oil
  • 2 Teaspoons of nutritional yeast (optional)
  • ¼ cup water
  • 1 Tablespoon  garlic- minced
  • 1 tsp Nama Shoyu (optional)
  • 2 teaspoons Apple Cider Vinegar
  • Juice of ½ small lemon
  • Himalayan salt or sea salt to taste

  • 2 cups of nuts (I prefer a mixture of macadamia and cashew nuts for this but pine nuts, brazil nuts, and walnuts are also great choices. Use what you have on hand)

  1. Place all ingredients except olive oil in food processor and blend until chunky.
  2. Drizzle the olive oil into the mixture. Mix until creamy and firm.
  3. Let cheese sit out at room temp covered with a towel for six to twelve hours.
  4. Using a plastic wrap, place the cheese into the center of the plastic wrap. Wrap the cheese in the plastic wrap, forming a sphere.
  5. Place in refrigerator. Chill at least 2 hours.
  6. Remove from refrigerator and roll in chopped nuts

I put a bunch of micro greens (from Trader Joe’s) on the bottom of a glass platter then place the Holiday Cheese Ball in the middle. Arrange cucumbers and raw crackers around it. This is always a big crowd pleaser!
