Fun Raw Food Recipes: Lunches for the Kids


Avocado Sandwich

Buckwheat bread
Cashew Mayo
Beverage – Water

Make a sandwich with 2 slices of buckwheat bread, smeared with cashew mayo. Smash avocado into bread and place lettuce on top. Cut jicama into sticks and grapes in 1/2 for sides dishes.

This is great bread not only in taste but convenience. I usually make it on Saturday evening. It is done by Sunday and I get 9 to 10 sandwiches out of it. If you have a toddler you can get 18 by using only 1 slice (cut it in half for top and bottom).

Buckwheat Bread

1/2 c. olive oil
1 1/2c. Soaked sun dried tomatoes
1 1/2 c flax meal
3c. Sprouted buckwheat
3 1/2 peeled zucchini, roughly chopped
2c. Apple, cored and roughly chopped
3T lemon juice
2 avocados
1 large onion
1/2 c. minced parsley

In a processor grind the olive oil; sun dried tomatoes (removed from the soak water), sprouted buckwheat, zucchini, apple, lemon juice, avocados, onion and herbs until thoroughly mixed.
In a bowl mix the batter with the flax meal by hand. The reason you do this separately (not in the processor) otherwise there is too much in the processor at one time. When you add the flax meal it will become heavy and sticky so you don’t want to overwork your machine.
When mixed, process the whole batter in the machine again, in small batches to achieve a light fluffy texture.


Divide the mixture in 2 and place on Paraflex sheets, on dehydrator trays.
Use a spatula to spread the mixture evenly to all 4 sides and corners of the Paraflex sheet. If mixture is too sticky you can wet the spatula to make things easier. With a knife score the whole thing into 9 squares.
Dehydrate for 2 hours and then remove the Paraflex sheets by placing another dehydrator tray and mesh on top and invert so that your original sheet of bread is upside down. This helps when you peel the Paraflex sheet off.

Continue to Dehydrate for approximately 8 hours more (I like to do this over night). If the pieces don’t fully come apart where you scored, use a knife to cut them.

1c. Cashews
2T lemon juice
½ t. salt
2T chopped onion
1/4c. water
1/2t agave

Blend all ingredients in a high speed blender until smooth.
