Chunky Chocolate Coconut Pudding

I have been having a blast experimenting with new ways to use coconut oil. The more I learn about this magical oil, the more my body craves it! This pudding is fun because it has lots of texture and a great taste. You can use this as a pie filling as well.

1 large ripe avocado or 1 cup avocado

7 dates – soaked until soft (at least 15 min.) then pitted

½ c raw cocoa powder

1 tsp vanilla extract

1 ½ tbsp coconut oil

1-2 pinches sea salt

½ cup plus 1 tbsp raw agave

½ cup shredded coconut

Put all ingredients except coconut into food processor with S blade. Blend until well mixed. There will be chunks of dates. Add shredded coconut and mix for a few seconds more. Refrigerate for at least one hour.

I like to serve this delicious pudding in martini glasses topped with chopped almonds – it’s definitely a crowd pleaser!
