Summer Superfood Snack

These are great to grab and go for a picnic, day on the beach, or a quick breakfast or snack for a summer car or plane trip.  Enjoy!  If you do not have some of the ingredients or prefer to leave them out, feel free to make this your own!

•    2 medium size fuji apples – cut into chunks
•    2 cups shredded raw coconut
•    1 tsp Himalayan or sea salt

Process in food processor with “S” Blade for one 30-40 Seconds then add and continue to mix

•    4 tablespoons raw almond butter
•    1 tablespoon cinnamon
•    3 tablespoons melted coconut oil
•    1 tsp vanilla
•    2 tsp maca
•    1 ½ tablespoon sucanat
•    1 ½ tablespoon chia seeds
•    2 tsp lecithin powder (I use Healthforce Nutritional brand)
•    2 tablespoons raw protein powder (I use Sun Warrior vanilla)

Transfer to large mixing bowl and add ½ cup goji berries

Two options at this point:

1.  Shape into round balls and roll in chia seeds and refrigerate for at least 30 minutes so they can firm up.
2.  Shape into large rounds and top with chia seeds and goji berries. Place on teflex dehydrator and place on mesh sheet and dehydrate on 105 degrees over night.  Remove from teflex sheet and continue to dehydrate until desired firmness.

I like to split the mixture in half and make both versions.
